What have been your experiences with Cynar 70? Obviously straight will be a good option, but where does it fit in the cocktail realm? I understand it tastes more intense and is double the proof of Cynar. So perhaps approaching it like using an overproof gin or rum to get you there sooner isn’t the best usage for it? Looking forward to your thoughts.
An entirely different animal than the flagship Cynar. Comparing the two is nigh impossible. They are both excellent in differing ways. This will definitely hold up in a mixed drink better than the regular Cynar, but you will also have to adjust the sweetener up a notch if the drink calls for it.
Heh. I pretty much use Cynar 70 a straight-up substitute. I love it.
I confess I still have never picked up a bottle, but word is it works well as the base of my Dowsing Rod. Once I obtain some my first thoughts will be of cocktails like that or Bitter Giuseppe or The Art of Choke which use regular Cynar as a base.
I love Cynar 70! Funny, because I bought it years ago when I was buying amari right and left, but after attempts to sub it for regular Cynar in a couple cocktails, I found it threw things off — not in a horrible way, but maybe not clearly better.
It’s been a while so I should try more of that (or Craig’s recipe there). Meanwhile, it remains one of my favorite amari drunk straight. I have to believe it will work very well mixed in something — I just have to find what that is!
