I believe it is that the flavor of the bitters becomes more pronounced in the batched bottle as time passes. Anyway, I went back to where I had read this:
“ Bitters were stirred in at the last minute—‘bitters expand in a batch over time, so I keep them out,’ says Bodenheimer…”
