Is there a good resource on rye vs bourbon consumption habits by in America by time period? And region if possible?

I’m trying to get a more detailed feel for why and how rye vs bourbon consumption changed in America throughout the years.

Most resources I have seen mention a north (rye) vs south (corn) preference in terms of grain used, but I’m curious if that changes in the 1880s as transporting goods throughout the country gets easier and America expands further out from the coasts.

I’m also curious in regards to rye consumption post-Prohibition. I understand it devastated distilleries and I read often that bourbon had an advantage after repeal due to corn subsidies, but it seemed like rye was still somewhat common post-Prohibition?

As with many things, the Oxford Guide to Spirits & Cocktails is an excellent place to start. From there, I would look into articles and books by Lew Bryson, David Wondrich, and others like them.
