Title says it all I reckon. Any particularly good sources on New Amsterdam and Colonial New York drinking establishments/breweries/distilleries? I can find some general information on this time period, but anything more specific to NYC region would be appreciated.

One low-hanging source is W. Harrison Bayles’ Old Taverns of New York (1915) (browse-able online: Old taverns of New York : Bayles, W. Harrison : Free Download, Borrow, and Streaming : Internet Archive).
I would add Alvin Harlow’s monumental Old Bowery Days (1931)–I say “would” rather than “will” since the last time I saw a copy for sale they wanted $750 for it–and Tyler Anbinder’s Five Points (2001), which is readily available.
I think I found Old Bowery Days at link below? This looks great! I’m actually putting together a stage/variety show tour of Green-Wood and was looking for more info on Big Tim Sullivan so this sort of a double whammy.
I have Five Points at home. but it’s been while since I read it. I thought it was more 19th century focused? Is there a specific section that’s colonial or Dutch New York focused?

That is a real bargain. This is a thick, dense book overflowing with cool stuff.
I tried looking for it on Internet Archive but clearly didn’t try hard enough. Good that it’s up there.
One more extremely useful source is the Andros Papers; Edmund Andros was the governor of the newly-English New York in the 1670s and there a whole lot of tavern stuff in there. It’s in three volumes; here’s one of them:
