Fee Foam Substitute

Approximately how many dashes or fluid ounces of the Fee’s Foam should you use to replace one egg white? I tried the chickpea vegan alternative at Jungle Bird in NYC and I wasn’t really a big fan of it.

From my anecdotal experience, 3-4 dashes of Fee Foam. Dry shake. Wet Shake.

I think Fee Foam is nice but it does have some drawbacks.

1: Too many dashes and your drink will have a funny, chemically taste to it.

2: Doesn’t add the same texture as egg white or aquafaba. Protein is important.

3: It doesn’t support dashes of bitters.

I’m fairly sure that quite a few bars in Denmark are making their own version of this blend with methyl cellulose and xantham gum now. It’s quite well received due to the simplicity of it being a one to one swap for egg white. It does the job quite well, so from a flavour perspective I can’t fault it.

My favourite option is still Ms Better’s Bitter Miracle Foamer, although I’m heavily biased as we used that at Swift in London for almost all egg drinks when I was there. Just a couple dashes and you get a solid foam. It’s just a shame I can’t get it easily here in Denmark now!

I’ve experimented a little with methyl cellulose foamer (not from this video, but based on the work of someone else – Joerg Meyer I think?). I was never super satisfied with the results, but I think I still have the ingredients, so maybe I’ll give it another shot with this specific technique.

I’m going to second the recommendation for Ms Better’s Miracle Foamer. Much better foam than Fee, and with a smaller amount of liquid, so less of its own flavor in the drink. And less of a distinct taste than aquafaba. The best vegan alternative I’ve tried.

Aquafab is a newish product that’s starting to appear in bars more here in Australia. Rather than chickpeas, it’s made using fava beans (aka broad beans).

I haven’t played around with it much myself, but the drinks I’ve been served with it didn’t have that telltale wet-dog note you sometimes get with aquafaba.

There is a bitters company in Vancouver, BC that makes a good substitute called Ms Better’s Bitters Miraculous Foamer. They claim 1 4 oz bottle can make over 400 drinks by using 8-12 drops of the stuff per drink. I first had it in a bar in Vancouver, BC and was impressed enough to ask about it and track it down. While I love a traditional sour I tended to never make them at home because of dealing with the egg. Now they are on a heavy rotation because of the foamer. I doubt they can accomplish anything close to a passable Ramos Gin Fizz but for anything that yearns for a velvety head I prefer this over an egg.
